Blueberry – Ginger Bread
Ingredients:
- 1 cup buttermilk
- 1 tablespoon softened unsalted butter
- 1 teaspoon of baking powder
- 1 tsp. vanilla extract (pure)
- 1-1/4 cup blueberries, fresh
- 2 big room-temperature eggs
- 2 tbsp. fresh ginger, coarsely grated
- 3/4 cup sugar, granulated
- 3/4 teaspoon salt
- 4 oz. unsalted butter (1/2 cup) melted and cooled
- 9 ounces (2 cups) more unbleached all-purpose flour for the pan
Instructions
- Preheat the oven to 350°F with a rack in the third bottom position.
- Combine the flour, sugar, baking powder, and salt in a large mixing basin. Whisk until everything is properly combined. Add the blueberries and stir to combine.
- Combine the buttermilk, eggs, ginger, and vanilla in a medium mixing basin. Blend everything together until it’s smooth. Combine the wet and dry ingredients in a mixing bowl. Add the melted butter to the pan. Gently fold with a silicone spatula until well combined.
- Scrape the batter into the pan and smooth it out evenly.
- Using a sifter, evenly distribute the sanding sugar over the batter.
- Bake for 50 to 55 minutes, turning halfway through, until golden on top
- Allow it cool for 30 minutes in the pan on a rack. Remove the pan from the bread and invert it, then flip it right side up to cool fully.
Blueberry Ginger Cocktail
Ingredients:
- 1/2 cup blueberries
- 1 inch chopped ginger
- two teaspoons of sugar
- 1 cup of water
- Gin (3 oz.)
- Water laced with soda

Instructions:
- Cook blueberries, ginger, sugar, and water together until the volume is reduced to 2/3.
- Cool to room temperature. Shake gin and 2 ounces syrup with ice in a cocktail shaker.
- Pour over ice in a glass
- Serve with fresh blueberries as a garnish.
Blueberry Ginger Smoothie
Ingredients:
- 2 cups blueberries, frozen
- 2 tablespoons fresh ginger, minced
- 1 cup plain low-fat yogurt
- A third of a cup of low-fat milk
- 12 teaspoon vanilla extract 2 teaspoons honey
- 1/8 teaspoon cinnamon, plus a pinch more to taste
- Extra blueberries as a garnish (optional)
Instructions
- In a blender, combine the frozen blueberries, ginger, yogurt, milk, honey, vanilla extract, and 1/8 tsp. cinnamon.
- Blend until smooth and well combined.
- Taste the mixture and add up to 1/8 teaspoon of cinnamon to taste, if desired.
- Pour into two glasses of your choosing.
- If desired, top with blueberries.
