  • ½ cup blueberries, frozen
  • ½ cup blackberries, frozen
  • 1 cup unsweetened almond milk
  • 1 tablespoon honey
  • 2 tablespoons coconut butter
  • 1 tablespoon chia seeds


  • Blend blackberries, blueberries, almond milk, honey, coconut butter, and chia seeds in a high-powered blender until smooth and creamy.
  • *If you don’t want the extra fat, then don’t add the coconut butter and chia seeds. You can also replace the almond milk with normal milk or half a cup of yoghurt. Some people may even add 1/2 cup of orange juice for a slightly tangy taste.

  • *For the filling:
  • 3 cups fresh blueberries
  • 2 cups fresh blackberries
  • 2 tablespoons fresh lemon juice
  • ½ sugar
  • 2 teaspoons cornstarch
  • 1 cup frozen whipped topping
  • *For the shortcake:
  • 2 cups flour
  • ½ teaspoon baking soda
  • ¼ cup sugar
  • ¼ teaspoon salt
  • 2 teaspoons baking powder
  • 1 tablespoon grated lemon rind
  • ½ cup fat-free buttermilk
  • ¼ cup chilled butter, cut
  • Cooking spray
  • Water
  • 1 large egg white, lightly beaten


  • Preheat the oven to 400 degrees Fahrenheit.
  • Spoon flour into dry measuring cups and level it to make shortcakes. In a large mixing basin, whisk together flour, sugar, grated lemon rind, baking soda, baking powder, and salt.
  • Using a pastry blender or two knives, cut in cooled butter until the mixture resembles coarse meal. Stir in the buttermilk until it is thoroughly moistened.
  • Knead the dough lightly four times on a lightly floured board. Cut 8 dough circles with a 3-inch biscuit cutter, making sure it has a 1/2-inch thickness. On a baking sheet sprayed with cooking spray, place the dough rounds at least 2 inches apart to give them space to breathe and expand.
  • Brush dough rounds with a mixture of water and egg white whisked together, and also sprinkle 2 teaspoons of sugar evenly. Bake for 15 minutes, or until brown.
  • Remove from the oven and set aside to cool on a wire rack.
  • In a small saucepan, combine the blueberries, 1/2 cup sugar, juice, and cornstarch to make the filling. Bring to a boil, then reduce to a low heat and continue to cook for 5 minutes, or until slightly thickened. In a large mixing basin, combine the remaining 2 cups blueberries and blackberries and toss to combine. Cover and set aside to chill.
  • Cut every shortcake in horizontally; spread 1/2 cup blueberry mixture over bottom half of the shortcake. Top half of the shortcake with 2 teaspoons whipped topping for each serving.

  • Preheat the oven to 375 degrees Fahrenheit (190 degrees C). Using cooking spray to coat an 8×8-inch baking dish.
  • In a mixing bowl, combine blackberries, blueberries, orange juice, and 3 tablespoons white sugar. Allow 20 to 30 minutes for the berries to absorb the liquid. Then, whisk the baking powder and all-purpose flour together until well blended.
  • In a separate bowl, add 1 cup sugar, melted butter, egg, and vanilla extract until fully incorporated. To make a smooth batter, gently whisk the flour mixture into the liquid ingredients. Cover the bottom of the prepared baking dish with a thin layer of batter; top with the berry mixture and liquids.
  • Over the berries, spoon the remaining batter and smooth it out into an equal top layer; top with white chocolate chips and brown sugar. Bake for 30 to 35 minutes until the cobbler is golden brown, the filling is bubbling, and the chips have melted.
